Gluten-Free, Dairy-Free Fried Onion Rings

Do you miss fried onion rings? Made with a gluten-free beer batter, these rings are crispy outside and tender inside, just like you remember. Indulge!



1 cup gluten-free flour blend of choice* (without xanthan gum), more for sprinkling 
1 teaspoon salt
1 teaspoon pepper  
1 cup gluten-free beer 
1 medium onion
Oil of choice, for frying


1. Place 1 cup flour blend and salt and pepper in a bowl and combine. Stir in 1 cup beer until ingredients are well blended. If batter is too thin, add an additional tablespoon flour. If too thck, add an additional tablespoon beer.

2. Peel onion and cut off the ends. Slice onion into ¼-inch to ½-inch thick slices. Break apart the rings and sprinkle them with flour blend. 

3. Pour oil into a frying pan, just deep enough to cover rings. Heat oil to medium-high until a drop of beer batter sizzles when placed in pan.  

4. Dip floured onion rings into beer batter and fry in oil on medium heat until golden brown. Add more oil if needed between rings. (Wait for oil to get sizzling hot before frying.)

5. Place fried rings on paper towels to drain. Keep onion rings warm until all are fried. 

*TIP For best results, use a flour blend of equal parts garbanzo flour and fava bean flour.

Yum! Used Bob's Red Mill Garbanzo/Fava Bean flour mix & Bard's GF beer. Delish! Also made fried shrimp with it using pre-cooked shrimp & it tasted great! Brings back memories... :-) Kids are excited about future uses like popcorn shrimp and coconut shrimp (going to try adding shredded coconut to the batter). Yippee! Wonder if we could make fried okra...(hubby is cajun) We are gluten, dairy & egg free, so this batter recipe is a *very* welcome addition to our kitchen - thanks, Living Without! Y'all are the greatest!

The link to the instructions for the baked onion rings was at the bottom of the email. As a prior comment stated, if you want the lightness without the alcohol or beer taste, try club soda or tonic water.

It does say in the e-mail to "scroll down the page" to get to the baked onion rings, so I assumed it would be on the same page. Mods, would a link to that baked recipe be possible? I haven't been able to find it yet.

Sounds like a great recipe--can't wait to try either version!

This recipe is for a tempura type batter which must be fried. The carbonated drink would give you the lightness of batter you are looking for. Even seltzer water would work. Milk of any type will not give you that "lift". If you are looking for the recipe for the baked onion rings, it is the other recipe - where the word FRIED is in quotes since they aren't fried. They are not at all like these fried onion rings, but if you can't eat fried foods or don't want the calories, they are a very tasty substitute.

You can make a tempora liker batter by using white rice flour and Sprite. Mix to a workable consistancy, dip in onion ring and fry. I have not tried baking this.

Like anothers comments, I don't want to use ber of any kind, don't like the taste. And, then, as another, thought this was a recipe to be baked, not fried..?? Last, much to my dismay, the suggestion to use bean flour mix of garbanzo and fava, neither of which we can have, due to allergic reactions. there's got to be something else here that we could use and perhaps, other instructions for the baked process that produces a crispy coating..?? Funny, just last week, I Was thinking of onion rings and so hoped we had one in some gf/cf/soyf cook book...Looks as if I'll have to keep looking after all. grandma peg

For those worried about the alcohol it is important to remember that all alcohol burns off in the cooking process.

A common/easy to find gluten free beer is Redbridge by Anheuser-Busch. I can even find it at Publix.

I looked at and some are using milk instead of beer. I wonder if rice milk would work.

I sort of use Living Without magazine as a gf catalog. Woodchuck Hard Cider is advertised in the current issue. It could be a substitute for beer. But if it is alcohol you want to avoid I think you could use any carbonated beverage. I would use seltzer or club soda. In the "old days" when I made batter from flour I used milk. So I think pretty much any liquid would work but carbonation would give you a lighter batter. This isn't an expensive recipe to try, so what could happen? As for gf beer, there are now several to choose from. Easy to find: Budweiser's Redbridge is gluten free as is Bard's.

New Grist (American) is the name of a Gluten Free beer as well as La Messenger (Canadian). Those are the two that I know.
