Braised Tarragon Lemon Chicken

Here we forge new traditions by reinventing Passover dishes to make them gluten-free, allergy-friendlyand easier. This Braised Tarragon Lemon Chicken recipe also takes advantage of the abundance of spring to create a delicious dinner thats lighter and healthier. Using chicken thighs helps keep the meat from drying out as it bakes in a low oven. Green olives are a favorite for this dish but pitted Kalamata olives taste great, too. This dish can be made up to two days ahead and refrigerated. Warm in a 250°F oven for 60 minutes or until heated through.
