Gluten-Free Bacon-Wrapped Bleu Cheese Dates


This hors d’oeuvre calls out sweet, salty, smoky and savory notes. Make a double batch, as these dates will disappear quickly.

24 dried, pitted dates
4 ounces bleu cheese or non-dairy alternative
12 strips bacon, halved crosswise

1. Preheat oven to 375F. Line 2 baking sheets with parchment paper.

2. Cut a lengthwise slit in each date and stuff with 1 teaspoon bleu cheese. Squeeze the date shut and wrap tightly with bacon, using a toothpick to secure each date.

3. Place dates on prepared baking sheets, seam side down, and cook in preheated oven until bacon is crispy, about 12 to 15 minutes. Halfway through, turn dates over to cook evenly.

4. Remove from oven. Allow dates to cool and serve at room temperature.

Each date contains 126 calories, 6g total fat, 2g saturated fat, 0g trans fat, 6mg cholesterol, 135mg sodium, 19g carbohydrate, 2g fiber, 2g protein.
