Hostess-Style Creme Filling

This recipe makes enough filling for both Hostess-Style Cupcakes and Twinkies. For all-natural (corn syrup-free) marshmallow creme, see the Shopping List on the Lunchbox Treats recipe page. This filling keeps on the counter for several weeks, so you can make it ahead.

1/4 teaspoon salt
2 teaspoons hot water
1 (16-ounce) jar marshmallow creme
2½ cups confectioners’ sugar, divided, more as needed
¾ cup non-hydrogenated vegetable shortening
1½ teaspoons pure vanilla extract


1. In a small bowl, combine salt and hot water until salt is dissolved. Let cool.

2. In a large bowl, place marshmallow creme, 1½ cups confectioners’ sugar, vegetable shortening and vanilla and beat until fluffy. Add salt water and beat to combine. Add more confectioners’ sugar, beating to combine, until the consistency of the filling is suitable for piping into cakes.

3. To make curlicue topping, remove ½ cup filling to a small bowl and stir in ¼ cup to ½ cup additional confectioners’ sugar. To test consistency, swirl a small amount on a sheet of wax paper and see if it retains its shape. If not, add more confectioners’ sugar. Reserve this mixture to make curlicue decorations on each frosted cupcake or Twinkie.

4. Scrape remaining filling into a pastry bag fitted with a ¼-inch round tip. To fill cupcakes or Twinkies, gently insert the tip of the pastry bag about ½ inch into the top of each snack cake and lightly squeeze some of the filling into each. Alternatively, hollow out the center of each with a cupcake corer and fill.

TIP: If cupcakes are too soft to fill, cover them with a clean kitchen towel for a few hours or overnight to firm. Then try again.
