Gluten-Free Strawberries in Frangelico

It doesn’t take a lot of time—or even an oven—to make this amazing Gluten-Free Strawberries in Frangelico dessert.

Ingredients:

1 cup water
½ cup sugar
3 tablespoons freshly squeezed lemon juice (preferably with pulp)
½ vanilla bean, split lengthwise
¼ cup + 2 tablespoons Frangelico, Amaretto, Sambuca or gluten- free liqueur of choice
2 pounds berries, washed, capped (sliced, if large)
-Sprigs of fresh mint, for garnish, optional
-Whipped topping of choice, for garnish, optional

Directions:

1. Bring water, sugar and lemon juice to a boil in a small saucepan.

2. Using the tip of a paring knife, scrape seeds from the vanilla bean into the saucepan. Then add the pod itself. As mixture continues to boil, stir until sugar dissolves and is no longer gritty. Boil 5 to 7 more minutes or until mixture is reduced to about 1 cup liquid. Remove from heat and let cool slightly.

3. Transfer syrup to a bowl and stir in liqueur.

4. When fully cool, add berries and stir to coat. Cover bowl and let berries sit in syrup at least 30 minutes.

5. Remove vanilla pod and serve, garnished with fresh mint. Top with a dollop of whipped topping, if desired.
