Gluten-Free Herb & Garlic Roasted New Potatoes

Roasted new potatoes drizzled with olive oil and herbs is a popular pairing with roasted lamb. Pick small potatoes that are similar in size and use any color you want. No need to peel them. Cutting potatoes diagonally exposes the largest surface for browning, adding to the flavor. To quick start the new potatoes and reduce roasting time, microwave them whole 1 to 2 minutes on high. Let cool and proceed with the gluten-free recipe.

2 tablespoons olive oil, more for brushing pan
2 pounds small white or red new potatoes
1 clove garlic, minced
1 teaspoon chopped fresh thyme, more for garnish
1 teaspoon chopped fresh rosemary, more for garnish
¼ teaspoon kosher salt, to taste
¼ teaspoon pepper

1. Preheat oven to 350°F. Brush a cast iron skillet or a small baking sheet with oil.

2. Cut potatoes in half diagonally and place them in a mixing bowl. Add 2 tablespoons oil, garlic, thyme, rosemary, salt and pepper. Stir to combine.

3. Turn potatoes into prepared pan. Place in preheated oven and roast 45 to 50 minutes or until caramelized and tender, stirring halfway through, if needed.

4. Before serving, sprinkle potatoes with additional chopped herbs, if desired.
