While you can get asparagus year-round, there’s nothing like locally grown asparagus when it’s in season. Adding salmon increases the protein contents of this gluten-free quiche, which helps keep blood sugar stable. The omega-3 fatty acids in fish give you the feeling of being satiated and benefit overall health. If salmon is off your list, omit it.

MAKES ONE 9-INCH PIE.

Ingredients:

1 bunch fresh asparagus
3 tablespoons oil, divided
3 shallots, minced
2 cloves garlic, minced
4 large eggs
¾ cup milk of choice
1 cup shredded Parmesan cheese or dairy-free alternative
⅓ cup goat cheese or dairy-free alternative
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh tarragon
¼ teaspoon salt
½ teaspoon pepper
1 (9-inch) gluten-free pie shell, unbaked
4 strips smoked salmon (about 3×5 inches each)

Directions:

1. Preheat oven to 350°F.

2. Bring 6 to 8 cups water to a boil in a large pot. Break off tough asparagus ends and discard. Cook asparagus in boiling water 2 minutes. Then plunge in cold water.

3. Cut tops of asparagus spears into a length of 3 inches. Set tops aside for topping the quiche. Dice ends of spears into bite-size pieces.

4. Place 2 tablespoons oil in large skillet over medium heat. Add shallots and sauté until translucent. Add minced garlic and sauté 1 to 2 minutes; do not let the garlic brown. Remove from heat.

5. In a large mixing bowl, whisk eggs, milk, Parmesan cheese and goat cheese until well combined. Gently stir in diced asparagus, shallots, garlic, parsley, tarragon, salt and pepper.

6. Pour egg filling into pie shell. Place strips of smoked salmon on top of filling. Arrange 3-inch asparagus tops on top of salmon. Brush tops lightly with remaining 1 tablespoon oil.

7. Place quiche in preheated oven and bake 45 minutes or until a knife inserted in the middle of the quiche comes out clean.
