Gluten-Free Apple Pork Fried Rice

This combo of sweet apple, crunchy fennel and punchy thyme turns gluten-free fried rice on its head in a very delicious way.

Ingredients

1 tablespoon + 2 teaspoons grape- seed oil or canola oil, divided
2 shallots, finely chopped
2 garlic cloves, minced
1 pound boneless pork chops, fat trimmed, cut into ½-inch pieces
2 medium carrots, chopped
2 cups chopped red cabbage
1½ cups chopped fennel
3 cups cold cooked brown rice
2 red skinned apples, cored, sliced into ¼-inch wedges
2 teaspoons lemon zest
1 tablespoon fresh thyme
½ teaspoon salt
¼ teaspoon black pepper
⅓ cup chopped walnuts or sunflower seeds, optional

Directions

1. Heat a wok or large skillet over medium-high heat. Add 1 tablespoon oil, swirl to coat pan and place shallots and garlic in pan. Stir fry 30 seconds or until shallots start turning golden.

2. Add pork and heat just until browned, about 2 to 3 minutes. Place carrots, cabbage and fennel in pan and stir fry 2 minutes.

3. Add 2 teaspoons oil to pan, swirl to coat and place cooked rice in pan. Stir fry 1 minute. Add apple wedges and heat 1 minute. Stir in lemon zest, thyme, salt and pepper. Serve garnished with walnuts, if desired.
