Chipotle Plum Drumsticks with Sweet Potato Wedges

Step up your grilled chicken game with these meaty drumsticks that are bathed in a naturally sweet plum sauce. Wedges of crispy sweet potato are a perfect sidekick. If feeding a big backyard crowd, you can easily double or triple the plum sauce, chicken and sweet potatoes. To allow the inside of the potato wedges to finish cooking before the outsides become completely charred, it’s best to parboil the potatoes in a pot of water just until slightly tender. If you have a large grill, you can cook the sweet potatoes and chicken at the same time. If not, cook the chicken and then cover to keep warm while you prepare the potato wedges.

Ingredients:

2 red plums, halved and pitted
2 teaspoons canola oil or grapeseed oil
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 garlic clove, minced
2 teaspoons fresh thyme
2 teaspoons minced gluten-free chipotle chili peppers in adobo sauce
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
12 uncooked chicken drumsticks

Potato Wedges
2 large sweet potatoes, cut into ½-inch wedges
1 tablespoon canola oil or grapeseed oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

1. Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high.

2. Lightly brush plums with 2 teaspoons canola oil. Place on grill grate and heat until grill marks appear and plums become tender, about 2 minutes per side.

3. Remove any charred skin from plums and place in a blender container along with 1 tablespoon water, olive oil, balsamic vinegar, garlic, thyme, chipotle pepper, cinnamon and salt; blend until as smooth as possible.

4. Place drumsticks on grill and heat 10 minutes. Flip and heat 10 minutes more. Slather on plum sauce and continue to grill until chicken reaches an internal temperature of at least 165°F, about 5 minutes more.

5. Place potato wedges in a saucepan, cover with water and bring to boil. Cook 3 minutes or until slightly tender but not cooked all the way through. Drain well. Toss with oil, smoked paprika, garlic powder, salt and black pepper. Place wedges on grill grate and grill until dark marks appear and potatoes are cooked through, about 10 minutes, flipping once halfway through. Serve warm with grilled drumsticks.

TIP: Peeling some of the skin off the chicken drumsticks will reduce the fatty calories.
