Zucchini Carrot Rolls

Years ago, I created a recipe for zucchini carrot tea bread in remembrance of my mother’s garden, which was always plentiful with zucchini. When I became allergic to yeast, I made a few adjustments to the recipe to create these tasty yeast-free dinner rolls. This recipe can be made egg-free; see instructions.

Quick Caraway Raisin Rolls

BAKE: 20–25 minutes

MAKES 24 ROLLS.

Irish Soda Bread is a favorite of mine and my bakery customers. This recipe takes a soda bread recipe and reworks it into yeast-free dinner rolls that beautifully complement a meal. Caraway seeds deliver a nice balance to the sweetness of the raisins. To reheat, warm rolls in the microwave for 30 to 60 seconds or in a 350°F oven for 15 minutes. These yeast rolls are packed with flavor. With a light crust and airy inside, they’re a welcome addition to your holiday menu. Substitute your favorite herbs—thyme, basil, oregano, chives, etc.—for the herbs in the recipe or simply add them as you like.

Biscuits are so versatile. For breakfast, enjoy them warm with jam. For dessert, slice them in half and top them with fresh strawberries and whipped topping for strawberry shortcake. For savory dinner biscuits, omit the sugar and add chives, herbs or grated cheese.
