Using simple ingredients, Hunn explains techniques to promote gluten-like qualities in bread, including texture improvements, so you can actually shape the dough for baguettes or challah without a sticky mess. Using one gluten-free flour blend, Hunn creates a variety of delicious breads—from basic white yeast loaves to egg-rich brioches, from tortillas to rye-free rye bread. Small notes: Dairy substitutes won’t yield the same results, Hunn says, but can still be delish. And she does not recommend a bread machine for these recipes. Many items call for preparing a “starter” 12 hours before you bake. This little bit of preparation rewards you with fresh, high-rising homemade bread.
