Healthy Holidays

Alicia Woodward

As this issue goes to press, the Living Without team is just back from Chicago where we attended the International Celiac Disease Symposium. This important meeting of the globe’s leading celiac researchers and clinicians was highly informative and truly inspiring—speakers from around the globe presented the latest findings on all things related to gluten. (For highlights, see our interview with celiac expert and symposium co-chair Dr. Stefano Guandalini.)

It’s exciting to see the world’s best and brightest tackling a topic that’s so near and dear to all of us. The research activity buzzing around gluten-related disorders is nothing short of thrilling. And it’s just the beginning. The “unknowns” surrounding celiac disease, gluten sensitivity and gluten ataxia, not to mention food allergies and asthma, are coming increasingly to the forefront of the nation’s research agenda.

During this special season of celebrating with food, your dietary needs are at the forefront of our agenda. That’s why this issue is packed with delicious recipes and creative ideas for making your celebrating easy, safe and tastier than ever. So dig in!

Kristine Kidd, the former food editor of Bon Appetit magazine, creates a mouthwatering gluten-free Christmas dinner with all the fabulous fixings. Serve this menu to your family and guests with pride and confidence. Matthew Kadey shines his culinary genius on winter squash, bringing mouthwatering pizzazz to your seasonal menus. Ricki Heller shares winning recipes for dishes you can bake and bring to potluck gatherings, your guarantee of balanced, nutritious items no matter where you happen to party.

We also include fetching gifts you can produce in your own kitchen. (They’re deceivingly simple to make.) Plus, we bring you traditional festive cookies revamped into gluten-free, allergy-friendly gems. (Believe me, no one will suspect.)

We want this to be your best and most delicious Christmas season ever. Our warmest wishes for a happy and healthy holiday!
