Plenty of Summer

As far as I’m concerned, summer is the best time of the year for those with special dietary needs. The abundance of fresh-picked produce—naturally gluten free and allergy friendly—makes every meal easy pickings.

This food bonanza is impossible to miss where I live way. There’s a nice farmer down the road who supplies the neighborhood with garden-fresh vegetables and fruit throughout the summer months and well into the fall. Whenever I see his pick-up truck lumbering up my driveway, its back-bed loaded with yellow squash, zucchini, melons and tomatoes, I’m in gluten-free heaven.

This issue features recipes that take full advantage of the seasonal bounty. Food editor Beth Hillson shares scrumptious ways to enjoy summer fruit in gluten-free baking (“Fruit-Full Homecoming, page 50). Matt Kadey delivers cool, refreshing smoothies, ideal for the sizzling days of late summer. Not only do these smoothies taste great, they truly nourish. In addition, they’re an excellent way to use up those garden greens—kale, spinach, broccoli—while punching up your antioxidants and nutrient count. And if you’re wondering what to do with the extra zucchini (the poster-child veggie of summer’s plenty), Beth serves it up in a delicious way (“Crisp Zucchini Rounds").

This time of year marks back-to-school transition and preparation and we’ve got that covered. “Class Treatment,” updates you on the important grassroots movement to get life-saving epinephrine in the schools to treat allergic emergency. We also provide practical advice and info for all those kids who are leaving the familiar safety of home and kitchen and moving into college dorms (“College and Your Special Diet,”).

If you’re looking to get out of town this summer, consider a visit to Chicago. In terms of perfect weather and a wealth of outdoor neighborhood festivities, these are the Windy City’s finest months. In “Your Kind of Town,” page 24, we map out multiple days of fun and food, featuring local dining spots that cater to special diets so there’s no chance you’ll go hungry.
