Good Eats: Sante Fe New Mexico

New Mexico cuisine is famous for its chilies. Green chile sauce, red chile sauce and a combo (called “Christmas”) can be found on many Southwestern menus. Traditional chile sauces typically contain wheat flour—so check ingredients at every restaurant stop.

The following dining establishments take extra steps to accommodate customers with special dietary needs. Call ahead to notify staff of your specific allergies and intolerances and double-check with the manager or your server once you’re there.
