We love to make fresh made tacos in the summer and enchiladas during the cooler fall months. We use their salsa for chips and dip and their jalapeños for the best nachos. But we just love when they launch a new product!
Hatch Chile Company’s newest launch is all about organic. Their brand new organic Red Enchilada Sauce is as versatile as the original. Find them in a grocery store near you in mild and medium varieties for your spice preference. In choosing a recipe that would really show off this new product, enchiladas seemed like the perfect fit. While you can use Hatch enchilada sauce in pretty much anything – from marinating and dressings to stews and sauces – enchiladas are its go to!
And there’s nothing better during a busy school night than sitting down to a warm meal together. But crazy school nights are stressful, and the last thing you want is a meal that requires a lot of attention, crazy ingredients, elaborate cooking styles. All you need to do for this recipe is cook the protein (beef is used in this recipe but can easily be substituted for ground turkey or chicken), roll it up into tortillas, and cover in the sauce! While this is coming together in the oven, and you’ve got 15 minutes to spare before dinner is ready to garnish and plate! If you have any leftovers, serve for breakfast topped with an egg for an easy and filling meal.
This recipe could easily be made dairy-free by using dairy-free shredded cheese and dairy-free sour cream for topping (or omit sour cream). You can also use gluten-free flour tortillas. You can also make mini enchiladas for small kid-sized hands with street tacos, available in major grocery chains.
