Are you ready to kick-start your weekend with a delicious vegan, gluten-free brunch?

Brunch is one of my favorite mealtimes. It is time for my family to come together and finally sit down and just relax. We are able to talk about our busy weeks, and dream about the days of next week, all while enjoying a delicious slow-paced meal.

During the workweek, my family often does not have a sit-down meal each night. We are often busy with school activities, sports activities, or appointments.  Or perhaps someone in the family is on a business trip during the week and isn’t there for a family meal. We use our weekend brunch time as our special family time – all together enjoying a meal. Since sitting down together is a bonding time that we all look forward to, we try to create a crave-worthy plant-based brunch that the entire family can look forward to every weekend.

Sometimes setting does matter. Look to host your brunch somewhere relaxing and refreshing. We often times change up where we eat our brunch. If the weather is nice, we eat it outside on our porch. In the winter, sometimes we have a brunch picnic in our living room. Wherever you dine, try to make the space welcoming and comfortable for your brunch.

Drinks are an important part of our brunch. We always have a cold non-dairy beverage available, along with naturally gluten-free and dairy-free coffee and tea. Since coffee is a staple at our brunch, we usually have a variety of So Delicious non-dairy creamer flavors on hand. In the warmer weather months, we often make iced tea or lemonade. 

And now for some mouth-watering plant-based menu planning! Gluten-free pancakes are always a treat at my home. To say that we love pancakes would be a vast understatement. We often make them in big batches, freeze them, and then eat them during the week for a quick breakfast. But on special brunch days, we make them fresh. I’ve created a delicious and unique gluten-free, vegan, plant-based pancake recipe that is perfect for brunch days. It provides both the quickness and ease of using a blender to puree the ingredients, and the comfort of a dish that you’d expect at a cozy brunch.

We used fresh strawberries to top our blender pancakes. We diced the fresh strawberries into tiny pieces. The strawberries bring a beautiful pop of red color to the dish along with a burst of sweetness. We also topped our blender pancakes with some So Delicious Dairy Free™ CocoWhip!™. This is probably one of my children’s favorite ingredients. They would literally eat it right from the tub, if their mean old mom would let them! This delicious dairy-free topping is certified gluten-free, certified vegan and made from organic coconut. While the CocoWhip™ is perfect to top foods, it is also delicious in beverages! Keep this in mind for your brunch beverage station!

Gluten-Free, Vegan Pancake Ingredients:

  • 2 c coconut milk (or non-dairy milk of choice)
  • 2 T maple syrup
  • 1 c rolled certified gluten-free oats (I use purity protocol gluten-free oats)
  • 1 c all-purpose gluten-free flour
  • ½ t baking powder
  • ½ t baking soda
  • pinch of salt
  • coconut oil for skillet


  • Strawberries
  • So Delicious Dairy Free™ CocoWhip!™
  • Maple Syrup

Pancake Directions:

  • Pour all ingredients into a blender. Pulse until well combined. Batter will be thick!
  • Warm a large skillet over medium heat. Add a touch of oil to the skillet.
  • Spoon batter into skillet, 1/3 c at a time. Gently use a spoon or a clean finger to make a circle with the batter. 
  • Cook 1-2 minutes on each side or until golden brown.
  • Top blender pancakes with strawberries, CocoWhip!™ and maple syrup!
  • ENJOY!
