Authentic from the Beginning
Their mission was to make living a gluten-free diet easy, delicious, and healthy for families. Authentic Foods founder Steve Rice, biochemist and chef by training, found there was little to nothing available to eat for those on a gluten-free diet. The baked goods that were available were barely edible - usually very gummy or hard as a rock. Not to mention they were very high in starch, fat, and carbohydrates, which lead to a high incidence of diabetes among other problems for people on a gluten-free diet.
This need for safe, nutritious foods led to Authentic Foods’ first gluten-free flour. GarFava Flour, a combination of garbanzo beans and fava beans, was designed to add protein and fiber to gluten-free baked goods. The idea of the GarFava flour was to provide a structure similar to wheat, and enough fiber to slow sugar intake into the bloodstream.
Steve Rice’s next goal was to develop a flour that mimics wheat’s taste, texture, and workability without the use of gums. After 17 years of research, Steve broke the molecule of gluten down piece-by-piece and re-built it using all wheat-less plant fiber! Authentic Foods has developed flours and baking mixes that mirror the structure, rise, taste and texture of wheat ever since! Gums are now fully eliminated from Authentic Foods mixes, making baking gluten-free easier and healthier, and enhancing the taste and texture of their baked goods.

While our Celiac Awareness Month recipe book mostly focused on Authentic Foods’ Pizza Crust Mix, they offer so much more to the gluten-free community!
Steve’s GF Flour Blend makes bread that is nearly indistinguishable from bread made with gluten. You can make a variety of breads: sourdough, sandwich bread, hamburger buns, tortillas, or even pita bread. Check out Authentic Foods' list of recipes you can make with this blend.
