Lamb Kofta

Makes 12–16 meatballs

Mediterranean, Middle Eastern and Asian cultures enjoy kofta made with ground/minced meat or bean and seasonings. This version is made with lamb but you can substitute ground beef or turkey with delicious results.

1 pound ground lamb
¼ cup minced onion or shallot
1 teaspoon curry powder or tandoori spice or garam masala
1 teaspoon ground coriander
1 teaspoon minced garlic ½ teaspoon salt
2 tablespoons fresh cilantro, chopped
1 tablespoon olive or coconut oil (for sautéing)

1. Mix ground meat, minced onion, spices and cilantro until well blended.

2. Shape into 1-inch meatballs

3. Sauté meatballs in olive or coconut oil in a large skillet over medium-high heat for approximately 10 minutes, turning to brown on all sides. Or bake meatballs in a preheated oven at 400 degrees for 20 minutes.

Each meatball contains: 89 calories, 7g total fat, 3g saturated fat 0g trans fat, 21mg cholesterol 0g carbohydrate, 90mg sodium 5g protein, 0g fiber
