Gluten-Free, Allergy-Friendly French Toast

This recipe duplicates the great taste of traditional French toast but without gluten, dairy and eggs. The optional mashed banana makes it a bit softer but the taste is divine! It takes very little time to make this dish and it can easily be adapted to serve more; just double or triple the recipe. Serve hot with organic maple syrup and fresh berries.

4 teaspoons chia seeds, salba seeds or flax meal
8 tablespoons water
4 tablespoons well-mashed ripe banana, optional
4 tablespoons coconut milk
Dash of pure vanilla extract
teaspoon ground cinnamon, more to taste
4 slices vegan, gluten-free bread
3-4 teaspoons vegan margarine or canola oil

1. In a small casserole dish, thoroughly whisk chia seeds with water and let mixture sit for 5 to 10 minutes to thicken. If you’re adding the banana, mash it really well with a fork and add to the chia mixture. Then add milk, vanilla and cinnamon.

2. Place bread in the mixture to soak, turning over once so that both sides are covered with mixture.

3. Heat a large skillet to medium-high and add margarine. When hot, transfer bread to the skillet and cook for about 3 to 4 minutes on each side. French toast will not brown like traditional French toast, but if you omit the banana, it will be crunchy like non-vegan French toast. (The addition of banana is delicious but it keeps the bread softer.) For a crunchier French toast, let bread cook longer on each side.

Each serving contains 417 calories, 15g total fat, 2g saturated fat, 0g trans fat, 10mg cholesterol, 197mg sodium, 68g carbohydrate, 5g fiber, 5g protein.

Kroger stores have gluten free bread. Depending on the size of the store you will find it on the shelf or in the freezer. Usually in a specialty aisle.

Hi, if you have the recipe book "gluten free in five minutes" you can make some wonderful bread for this recipe. It is all done in the microwave, single servings..and down right delicious!! I bought the book through the Living Without magazine when I subscribed..I love it!

I like Ener-G's breads - gluten-free, dairy-free, egg-free etc. But as for your French toast being like pudding in the middle, that's not surprising. The proper way to make "real" French toast is to soak bread overnight in the egg-milk mixture so that you get that "custardy" texture in the center. Want something really great? Make your French toast (with or without egg/milk/gluten), soak up the mixture, then press it lightly in crushed corn flakes...flip it and press again. When you sautee it up you'll get crunchy, then crisp, then custard in the middle! Triple yum!

It would be helpful if you could post a GOOD gluten, dairy, egg free bread recipe. ALL GF bread I have had has a gummy/slimmy middle even after toasted, or the bread was just like crumbly sawdust. I tried making french toast and the outside was nice and crispy and the middle was like pudding even after cooking it for a very long time. Love this site. Keep up the good work!!!

I've found several brands of gluten, yeast free bread, and other healthful ingredients. That is, either with or without some ingredients. Some are fresh, some are frozen, and some sealed somehow for long fresh life.But, if you don't have any co-op stores in your vicinity, you could purchase the completed product or a mix for do it yourself. In fact, the stores don't carry all of the products manufactured by a company, but if you request a catalog, you will see every thing that they make to order. Huge variety! So, look for member run, health food, co-ops.

This was exciting until I got to the part in the ingredient list that said, "4 slices vegan, gluten-free bread". I'd love to know how/where to get this item because I have never been able to successfully bake any myself, and I've NEVER seen any in grocery stores. It's not cool to post a recipe recipe "without gluten, dairy and eggs " without telling us the recipe for something in the ingredient list. It makes this recipe virtually useless.
