Dairy-Free Cottage Cheese

MAKES 2 CUPS

Dairy_Free Cottage Cheese

This dairy-free cottage cheese recipe can be used in place for a variety ... great in salads, with fruit, on gluten-free bread, or all by itself.

Ingredients:

7 ounces silken tofu or medium tofu or coconut yogurt
teaspoon garlic powder
1 tablespoons olive oil
teaspoon salt

Directions:

1. Place tofu or yogurt into a medium bowl. If using tofu, mash it with the back of a fork.

2. Add remaining ingredients and continue mashing until mixture has a cottage cheese texture. Chill in refrigerator until used.

1 cup of cottage cheese contains 196 calories, 8g total fat, 392mg sodium, 16g carbohydrates, 15g protein.
