Beet Horseradish

MAKES 1½ CUPS

Grated horseradish mixed with vinegar is referred to as “prepared horseradish” in culinary circles. Use this punchy, vibrant version as an accompaniment to beef, chicken, fish, lamb or pork. It also makes an inspirational burger topping. The large holes on a box grater are ideal for grating beets and horseradish. You can also use the grating attachment of a food processor.
