Food and Food Sensitivities Can Build a Bridge
Good community and good food go together. Take, for example, the background story about our allergy-friendly peach cobbler, the recipe featured this week. Madalene Rhyand, director of Living Without’s test kitchen, was on a road trip when she spotted peach cobbler on the restaurant menu. No, it wasn't gluten free, egg free or dairy free, but her questions resulted in a long conversation with the restaurant server, who had her own list of food sensitivities.
So here is the double happy ending to this story. Not only did Madalene go back to our test kitchen and reformulate this delicious dessert to be free of gluten, dairy and egg (no nuts or peanuts either), she also made a wonderful new acquaintance based on common ground.
There’s a bond among people with special dietary needs and it’s based on shared experience. Meeting others who are living without is like finding a community of long-lost friends. It’s such a relief to talk with people who “get it,” not to mention the practical bonus of exchanging life-enhancing information. No matter disparate backgrounds or far-flung distances, there’s instant intimacy among strangers.
